Some More Recipes Finally!

Finally, was hospitalized from Sunday - Wednesday and then recovering at home since. I hope you find these recipes tasty. ~ Ashley

Weight Watcher Classic Crockpot Beef Chili
Estimated POINTS value per serving 2
Serves 6
Ingredients
1 lb. lean ground beef (10% or less)
2 garlic cloves, finely chopped
2 tbsp. chili powder
1 tsp. ground cumin
1 can (28 oz.) crushed tomatoes
1 can (15 oz.) red kidney beans, rinsed and drained
1 sweet onion, chopped
1/4 cup canned diced chilies
2 tbsp. tomato paste
Oregano sprigs for garnish
Instructions
1. In a large nonstick skillet brown beef and garlic over medium heat, stirring occasionally to break up meat. Drain excess fat. Add chili powder and cumin and stir to combine.
2. Combine tomatoes, beans, onion, chilies, and tomato paste in crockpot. Stir in beef mixture. Cover and cook on High until flavors are blended, 4 - 5 hours. Serve garnished with oregano.

Swiss Chicken Casserole
6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted
Lightly grease crockpot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix.
Cook on low 8 to 10 hours or high 4 to 6 hours.Serves 6.

Cheesy Crock-Pot Chicken
6 chicken breasts (boneless, skinless)
salt and pepper, to taste
garlic powder, to taste
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
1 can water
Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in a crock pot. Cook on low all day (6 to 8 hours). Serve over rice or noodles.

Chicken-Rice Casserole
4 large Chicken breasts
1 can Cream of chicken soup (small
1 can Cream of celery soup (small)
1 can Cream of mushroom soup (small)
1/2 cup Diced celery
1 cup Minute rice
Mix in crock-pot the 3 cans of soup and rice. Place the chicken on top of the mixture, then add the diced celery. Cook for 3 hours on high or 4 hours on low.
Makes 4 servings. More rice, about 1/2 cup, and 2 other chicken breasts may be added to make 6 servings.
Crock Pot Taco Casserole
1 lb. ground beef or turkey
1 med. onion, chopped
1 clove garlic, minced
1/2 c. green pepper, chopped
2 drops Tabasco sauce
15 oz. can tomato sauce
1 tsp. chili powder
1 c. frozen corn
2 (16 oz.) cans chili with beans
3/4 lb. grated cheese
Nacho cheese tortilla chips
Brown ground meat and drain. Add onion, garlic and pepper and cook until transparent. Add remaining Tabasco, tomato sauce, and chili powder. Grease crock pot and layer in 5 layers, beginning with meat mixture and nacho cheese tortilla chips, then the corn, chili, and grated cheese.
Cover and cook 6 to 8 hours on low.
Pork Chops Supreme
1 onion, sliced
3 potatoes, peeled and sliced
1 can Cream of Mushroom or Celery Soup
4-6 pork chops
salt and pepper to taste
Put onions and potatoes in bottom of crockpot. Top with chops, salt and pepper, pour soup over chops. Cook on low for 8 hrs. or on high for 4-5 hours.


Taco Soup <-- A fav. at our house and you can spice things up if you like when it comes to the type of Rotel tomatoes you use.

1 lb ground beef
1 16 oz can kidney beans
1 11 oz can niblet corn
1 10 oz can Rotel tomatoes
1 small pkg taco seasoning
1 28 oz can Progresso tomatoes
1 sm can chopped chile peppers
1 16 oz can pinto beans
1 sm pkg Hidden Valley Ranch Dressing
brown the ground beef and drain. add all other ingredients and stir (do not drain cans before adding). simmer in crock pot on low for 6-8 hours. serve with taco chips or mexican cornbread.

A New one from Betty...

Slow Cooker Chili Mole

Chili seasoning and chocolate give this chili its distinctively rich, dark, smoky flavor.

Prep Time: 15 min
Total Time: 4 hours 15 min
Makes: 6 servings (1 1/2 cups each)

1 lb lean (at least 80%) ground beef <-- could use ground Turkey
1 medium onion, chopped (1/2 cup)
1 package (1.25 oz) Tex-Mex chili seasoning mix
1 can (28 oz) diced tomatoes, undrained
1 can (28 oz) crushed tomatoes, undrained
1 can (15 oz) spicy chili beans, undrained
1 oz unsweetened baking chocolate, coarsely chopped

Total Time: 37 min 1. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
2. Spray 4- to 5-quart slow cooker with cooking spray. In cooker, mix beef mixture and remaining ingredients.
3. Cover; cook on Low heat setting 4 to 6 hours. Stir well before serving.
High Altitude (3500-6500 ft): No change.

*Easy Chicken Casserole

20 ounces frozen chopped broccoli, thawed and drained
4 cups boneless skinless chicken breast, cooked and cubed
1 can condensed reduced fat reduced sodium cream of chicken soup
1 cup light sour cream
2 cups reduced fat Monterey Jack cheese
1/2 cup bread crumbs
1/4 cup butter, melted

Preheat oven to 350. Put broccoli and chicken in bottom of 9 x 13 pan.
Combine chicken and sour cream; mix thoroughly. Add 1 1/2 cups of cheese to soup mixture. Pour over chicken and broccoli in pan.
Combine remaining cheese, butter and bread crumbs. Sprinkle over casserole.
Bake 40 minutes or until browned and bubbly.

Cheesy Chicken Casserole

Weight Watchers Cook Book


servings 8 WW points = 6

List of Ingredients
2 cups cooked macaroni
2 cups chopped skinless boneless chicken breasts
2 cups canned 98% fat free condensed cream of mushroom soup
2 cups fat free milk
8 ounces low fat cheddar cheese, cut into small cubes

1.preheat oven to 350
2.in large casserole , combine all ingredients, mixing well,
3. bake, covered, 35-45 minutes, remove cover, bake 10-15 minutes longer.

Crockpot Lasanga
Makes 8 servings, 7 points each.
Ingredients
• 1 1/2 lbs lean ground turkey
• 1 large onion, chopped
• 2 Tbsp minced garlic
• 1 lb fat free mozerella
• 12 oz fat free cottage cheese
• 1 tsp Italian seasoning
• salt & pepper to taste
• 8 oz no-bake lasagna noodles
• 30 oz tomato sauce
• 6 oz tomato paste
• 1 cup mushrooms, sliced
• 1/2 green pepper, chopped
Instructions
In a frying pan, brown turkey with onion and garlic. Add spices and tomato sauce and paste, stirring over medium heat until warm all the way through. Mix cheeses in seperate container. Layer 1/3 meat sauce, 1/3 noodles, 1/3 cheese, and 1/3 vegetables in crockpot. Repeat 2 more times until all ingredients have been used. Cook on low 4-5 hours.

Crockpot Chicken Stroganoff
Makes 6 servings, 4 points each.
Ingredients
• 1 pound boneless, skinless chicken
• 1 container (16 oz) fat free sour cream
• 1 packet powdered onion soup mix
• 1 can fat free cream of chicken soup
• 1 small can mushrooms
Instructions
Add all ingredients to crock pot. Cook on low for 6 hours.

Ham & Potatoes Au Grautin
2 cups of diced extra-lean ham
4 cups of diced raw potatoes
1 cup of chopped onions
3/4 cup shredded reduced fat cheddar cheese
1 -10 3/4oz can of Healthy Request Cream of Celery Soup (I prefer to use cream of chicken)
1/8 teaspoon black pepper
1 teaspoon dried parsley flakes
1 teaspoon yellow mustard

Spray your crock-pot with butter flavored cooking spray. Combine ham, potatoes and onions. Sprinkle cheese evenly over top. In a small bowl, combine soup, pepper, parsley and mustard. Add soup mixture to potato mixture. Mix well to combine. Cover and cook on low for 8 hours. Mix well before serving.

Makes six 1-cup servings at 3 WW pts per serving.
Sweet & Sour Chicken
1 lb boneless, skinless chicken breast
5 oz LaChoy Sweet & Sour sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
8 oz pineapple chunks in juice, drained (reserve 1/4 cup juice)
1 tablespoons brown sugar
16 oz bag of frozen stir-fry vegetables

Cut the raw chicken breast into bite sized pieces. Spray your crock-pot with cooking spray. Add chicken, garlic powder and onion powder; stir. Stir in sweet and sour sauce, pineapple chunks, brown sugar and the 1/4 cup of pineapple juice. Cover and cook on low for 6-7 hours. Add frozen vegetables during the last 30 minutes of cooking and cook on high.
Makes four servings at 5 WW pts per serving.

Hamburger Casserole Crock Pot Recipe

Ingredients:
16 oz. extra lean gr. beef (or turkey)
2 cups sliced raw potatoes
1 1/2 cups sliced carrots (I used frozen)
1 cup chopped celery
1/2 cup chopped onion
1 cup frozen peas –thawed
1 cup frozen whole kernel corn – thawed
1 10 oz. can healthy Request Tomato Soup
1/2 cup water
1 tsp. dried parsley flakes
1 can mushrooms
Salt and Pepper

Directions:
In large skillet brown meat, onion & celery mixture and mushrooms. In slow cooker – sprayed with a butter flavored spray (or a non-stick cooking spray), combine meat mixture, potatoes, carrots, peas, and corn. Stir in tomato soup, water, parsley flakes and salt and pepper to taste. Cover and cook on low 6 to 8 hours.
Serving = 1 cup
Each serving = 5 Weight Watchers Points

Chicken Jambalaya Recipe
Ingredients:
- 1 spray non fat cooking spray
- 2 1/2 oz raw turkey sausage, chopped
- 1 large onion, chopped
- 1 medium celery, stalk, chopped
- 1 small green pepper, chopped
- 1/4 tsp cayenne pepper, or to taste
- 1/2 tsp dried thyme
- 1 tsp table salt
- 1/2 tsp black pepper, ground
- 2 medium garlic cloves, minced
- 2 medium chicken breast, cooked, skinless, cubed (about 2 cups)
- 28 oz canned tomatoes, whole, plum, peeled with juice
- 2 cups fat-free chicken broth
- 1 cup uncooked white rice, long-grain

Directions:
Coat a large, nonstick saucepan with cooking spray. Over high heat, sauté sausage until crispy on edges. Add onion, celery and green pepper; sauté until tender.
Reduce heat and stir in cayenne, thyme, salt, pepper and garlic; sauté until garlic is fragrant.
Stir in chicken, tomatoes, broth and rice. Bring to a simmer, cover and let cook until rice is tender, about 20 minutes.
Flavor Booster: Popcorn rice, a specialty of Louisiana, is a delicious substitute for long-grain rice. The rice, which has a mild nutty taste like basmati rice, is available through gourmet food stores and Internet specialty shops
Serving size is 1 1/4 cups
Each serving = 7 Weight Watchers Points
